I have a vague memory of Shrove Tuesday from my days at Catholic School, something about feasting before Lent. I for one, need little excuse to chow down on a stack of fluffy carbs, something that probably happens way to often in the Forever and Green household.
This recipe comes from 'The Happy Pear'. If you're not following them already you should, they are a pair of twins from Greystones, Ireland; incredibly energetic, a joy to watch and they have some amazing vegetarian and vegan recipes. They are also all about building a happy, healthy community, so we're totally on-board with that.
We made these with Coconut flour (as we've recently gone Gluten Free) and it worked a treat! You can check out the full recipe in the Video below!
1 Mug (12oz/ approx. 200g) Wholemeal spelt flour
1 Mug Rice Milk (milk of your choice)
3 tbsp Flax Seeds (could use Chia seeds instead)
2 tsp Baking Powder
3 tbsp Almond Butter
3 tbsp Maple Syrup
1 tsp Vanilla Extract
1 pinch of Salt
